Seth Godin wrote a blog post recently about the project being the everything that goes with it, not just the fun and exciting bits.
The title of the post is If you don’t have time to clean up, you don’t have time to cook.
Though I think it goes further than that.
There is the unglamorous work that goes in before hand.
Something that I am going to call picking the vegetables.
Regardless of whatever it is you are making, you need to make sure that the ingredients are suitable for the dish.
While you can make chips with any potato, personally, I think Sebagos are the best ones.
Knowing and understanding which ingredients to use when making something comes with experience, and very rarely overnight.
